Ingredients
-2 eggs -2 large zucchini
-1 garlic clove -1
chili
-herbs
Salad-cut
-salt & pepper
extra-virgin olive
-parmesan
Preparation
For the omelette. Heat a pan with a little non-stick oil. When it is hot pour in the eggs previously beaten with a pinch of salt and pepper. Cook on both sides.
For the courgettes. Washed and diced zucchini. Toss with a little olive oil, garlic and chilli. Salt and pepper and flavored with herbs to taste (menta.salvia, parsley, basil). When they arrange them cooked but not too over the omelette, a close range and serve on a bed of salad. Then sprinkle with parmesan and extra virgin olive oil.
